175 g smoked haddock -- 6 oz
175 g haddock -- 6oz
1 tsp lemon juice
1/4 cup butter -- melted
2 hard-boiled eggs -- coarsely chopped
1/3 cup cream
salt and freshly ground black pepper
2 tbsp chopped fresh parsley
Place the smoked haddock and haddock in a pan and just cover with water. Bring to the boil and simmer gently for 10 minutes.
Remove the bones and skin and flake the fish. Keep it warm.
Gently heat the cream until almost boiling.
Stir the fish, butter , most of the eggs, and the cream . Season to taste with salt and pepper and serve sprinkled with the remaining eggs and parsley.
I have removed the rice (350gr 12oz) from the recipe. It can be substituted with faux rice made from greated cauliflower.
