750 g eel -- 1 1/2 lb
175 g bacon -- 6oz
450 g green beans -- 1lb top and tail
1 1/4 cups fish stock
4 lg tomatoes
1 pinch splenda
Bay leaf
1 onion -- chopped
Salt and pepper
Cut the bacon into small pieces and fry for 2 minutes. Add the chopped onion and continue cooking for a further 3-4 minutes.
Add the sliced eel to the bacon and onion and cook until lightly browned.
Chop the tomatoes and add to the eel and bacon mixture with the bay leaf, splenda and stock. Stir in
the peas and simmer for 20 minutes.
