1 tbsp butter
225 g chicken breast -- 8 oz
350 g leeks -- 12 oz
5 cups chicken stock
bouquet garni
Salt and freshly ground black pepper

Melt the butter and fry the chicken until golden brown on both sides.
Cut the white parts of the leeks in quarters lengthways then chop into 25mm 1" pieces. Reserve the green parts. Add the white parts to the pan and fry for 5 minutes until soft.
Add the stock and bouquet garni and season with salt and pepper. Bring to the boil, cover and simmer for 30 minutes until the chicken is tender.
Remove the chicken, discard the skin and bones and cut into large chunks. Arrange the chicken in a warmed serving bowl and pour over the hot soup.
