CHICKEN WITH PARSLEY

2 tbsp oil
4 chicken breasts
2 onions -- sliced
2 cl garlic -- crushed
2 tbsp soy flour -- or isolate
2 1/2 cups chicken stock
1 bay leaf
2 tsp mixed herbs
Salt and freshly ground black pepper
2 tbsp chopped fresh parsley
1 egg -- beaten

Heat the oil and fry the chicken until browned on all sides then transfer to a casserole dish. Add the
onions and garlic to the pan and fry until soft but not browned then add them to the casserole.
Stir the flour into the pan and cook for 1 minute, stirring. Stir in the stock, bring to the boil and
simmer, stirring, until the sauce thickens. Add the bay leaf and herbs and season to taste with salt and
pepper. Pour over the chicken, cover and bake in a preheated oven at l80C/350F/gas mark 4 for 1 hour. Cook, uncovered, for a further 30 minutes. Discard the bay leaf before serving.
