JAMAICAN JERK CHICKEN SKEWERS

1/3 cup olive oil
3 tbsp white vinegar
1 1/2 tbsp fresh lime juice
1 tbsp splenda
1/4 cup green onions
2 cl garlic -- minced
1 pepper -- seeded, minced
1 tbsp dried thyme
2 1/4 tsp ground allspice
1 1/2 tsp cinnamon
salt -- to taste
2 1/4 tsp cayenne pepper -- to taste
1 lb skinless boneless chicken breasts -- 1kg cubed
Combine all ingredients except chicken and mix well. Rinse the chicken under cold water, pat dry with paper towels and place in a large, ziplock plastic bag. Pour in the marinade, seal the bag, then tip and turn it so all the chicken is coated. Refrigerate at least 4 hours. Remove chicken from the marinade, thread on the skewers and grill, turning occasionally. Skewers will cook in 15 to 20 minutes. Serves 20 - 1 gm carbs/serving
