2 tbsp Cajun seasoning
2 tbsp olive oil
3/4 kg beef fillet steak -- 1 3/4lb 8 pieces
1 lg red onion -- sliced
1/2 sm red bell pepper -- capsicum,seeded, sli
1/2 sm green bell pepper -- capsicum,seeded, sli
1/2 sm yellow bell pepper -- capsicum,seeded, sli
1/2 cup water

Capsicum mixture can be made a day ahead. Cajun seasoning is available in supermarkets. Recipe best made close to serving. Combine seasoning and half the oil in small bowl; rub steaks with seasoning mixture.
Heat remaining oil in large pan, add onion, capsicums and water; cook, covered, stirring occasionally,
until capsicum is soft; remove from pan, keep warm. Cook beef, in batches, in same pan, until browned on both sides and cooked as desired. As a serving base Marg and I quite often use left over Riccota mixed with a few herbs and scallions pressed thinly into a pizza pan and baked for about thirty minutes until lightly browned.
Not suitable to freeze. Not suitable to microwave.
