6 med zucchini
1 cup olive oil
2 tbsp red wine vinegar
2 tbsp chopped fresh basil
2 sm red chiles -- chopped
Cut zucchini lengthways into 5mm slices; cook on both sides, in batches, in greased heated griddle pan (or grill or barbecue) until charred and tender. Combine hot zucchini with remaining ingredients in large bowl; cover, stand at room temperature for at least 1 hour before serving.
