3/4 kg pork -- 1 1/2 lb
6 cl garlic -- crushed
1 tbsp ground cumin
2 tsp ground coriander
2 tsp paprika -- ground hot
1/4 cup fresh parsley -- chopped
2 tbsp oregano -- chopped fresh
1/2 cup olive oil
Soak bamboo skewers in water 3 hours or overnight to prevent them burning.
Cut pork into 3cm cubes, combine with remaining ingredients in large bowl. Cover; refrigerate 3 hours or overnight. Thread pork onto skewers; discard remaining spice mixture. Cook skewers, in batches, in greased heated griddle pan (or grill or barbecue) until browned and cooked through. Makes 12. Can be made a day ahead.
