ROAST BEEF AND CAPERS ON LC BREAD

1 cup sour cream
2 tbsp grated horseradish
LC bread 10 slices toasted cut in thirds -- adds 40 g carbs
250 g thinly slIced rare roast beef -- 8oz
Baby capers
Finely sliced red onion
Dill to garnish
Freshly ground pepper
Coarse sea salt


Roast a well trimmed piece of beef yourself or alternatively, buy rare roast beef from a deli. Make sure the beef is sliced very thin.
Season the sour cream with the horseradish so it has quite a bite to it. Arrange the slices on a board and spoon a little sour cream on each. Top with a curl of roast beef.
Garnish the bread with the capers, onion and a dill sprig, giving each one a good pepper and a light sprinkling of sea salt.

Makes about 30. apx. 2carbs per nibble.
