8 lg pork loin chop, R-T-C -- medallions
1 1/2 tsp butter
- Topping -
Salt and Pepper -- to taste
1 sm white onion -- finely chopped
1 med avocado -- ripe mashed
6 drops Tabasco sauce
2 slices bacon -- chopped
1/4 cup macadamia nuts -- crushed
Season pork with salt and pepper and lightly fry in melted butter until just seared on both sides. Place on griller tray.
Lightly fry onion in pan drippings until soft. Spoon into basin with mashed avocado, Tabasco sauce, macadamias, salt and pepper. Spread over Pork Medallions. Sprinkle with chopped bacon and grill for about 10 minutes at low temperature.
