LAMB STACKS WITH VEGETABLES

375 g lamb -- 12 oz
1 sprig rosemary -- strip the leaves
1 garlic clove
1 tbsp Extra Virgin Olive Oil
Salt and freshly ground pepper
2 red peppers
1 lg eggplant -- sliced across

Trim lamb of gristle or fat. Crush rosemary lightly in a mortar and pestle. Rub lamb with garlic and brush all over with Extra Virgin Olive Oil. Roll it in the rosemary, season, and leave to marinate.

Preheat the grill to very hot. Grill peppers about 2.5cm rom heat until skin blackens and blisters, turning frequently. When done, place in a paper bag, leave for several minutes and
scrape of skin

Halve peppers, remove ribs and seeds and cut lengthwise into 2cm 3/4" wide strips.

Saute eggplant in Olive Oil until cooked and golden, drain on paper towels and set aside with the peppers in a warm place.

Next make the sauce. Peel a garlic clove and cook with the beef stock and a stem of rosemary for 15 minutes. Just before serving, add arrowroot, mixed with a tablespoon of water and blend in to thicken.

Place lamb in a preheated hot 400°F-200°C oven for 10 to 15 minutes, remove and let it rest for 10 minutes covered with foil. Slice finely and keep warm. On 4 hot plates, layer eggplant and pepper alternately, overlapping slightly to make a circle. Place slices of lamb on top, spoon on sauce and serve immediately, garnished with extra rosemary sprigs.

Ask the butcher to cut the fillet of lamb from a small loin of 6 chops. It may be more expensive but there is no waste and it is very special.
