GOAT CHEESE & SPINACH GNOCCHI

1 bunch Spinach
180 g ricotta cheese -- 6 oz
70 g firm Goat cheese -- 2 1/2oz
50 g Grated Parmesan cheese -- 1 1/2oz
50 g soy protein isolate -- 1 1/2oz
1 egg -- lightly beaten.
1 pinch freshly grated nutmeg
Salt & pepper
Wash spinach carefully to remove all grit. Blanch in boiling water. Drain well then squeeze dry, pressing all excess moisture through a clean cloth.
Chop well. Mix with the remaining ingredients and roll into a 25 mm thick pipe on a floured bench. Cut into 50 mm lengths and roll in flour.
Poach in boiling water until they rise to the top, and then remove with a slotted spoon. To serve. Place 3 to 4 pieces in a shallow bowl, top with blanched asparagus and a crumble of the firm Goat cheese. Drizzle with a quality Olive oil and black pepper.
