1/2 med lettuce -- cos
1 sm fennel -- thinly sliced
25 g watercress sprigs
2 med tomatoes -- sliced
1 med red onion -- thinly sliced
250 g black olives -- seeded 8oz
LEMON DRESSING
1/2 cup olive oil
1/4 cup lemon juice
2 cl garlic -- crushed

Combine torn lettuce leaves, fennel and watercress in large bowl, with 1/2 cup of Lemon Dressing. Top with tomatoes, onion and olives; drizzle with remaining Dressing. Lemon Dressing: Combine all ingredients in jar; shake well.
