125 g blue cheese -- 1/4lb
1/2 cup olive oil
3/4 tsp paprika
1 tbsp lemon juice
1 tbsp vinegar
2 tsp Worcestershire sauce
1/2 tsp dry mustard
1 tsp brandy
salt to taste

Rub cheese through a sieve. Slowly mix with the oil. Add remaining ingre-dients and mix until well blended and smooth.
