2 tbsp unsalted butter
8 lg mushrooms -- sliced thin
1 cucumber
peeled seeded and sliced thin crosswise
2 tbsp fresh tarragon -- leaves chopped
tarragon sprigs for garnish
1/4 cup heavy cream
1/2 tsp dijon-style mustard

Saute mushrooms over medium heat in butter until soft. Add cucumber and cook stirring frequently for about 5 minutes or until the cucumber softens. Add rest of the ingredients and cook until mixture thickens slightly. Season and serve hot.
