10 waterchestnuts
4 chopped shallots
250 g shelled and deveined prawns -- 8oz shrimps
1 1/4 tbsp corn flour -- or a little gum
1/4 tsp salt
1 egg whIte
1 tbsp rIce wine or dry sherry
The wonderful texture of these delectable morsels are sure to make your guests thirsty for a cocktail.
Using a food processor with the blade in, add water chestnuts, shallots, prawns, cornflour and salt to the beaker. Process, rapidly turning power on and off for 15 seconds. Add egg white and wine, or sherry, and process until a smooth mixture forms. Shape into bite-size balls.
Heat vegetable oil in a wok and fry prawn balls, about 10 at a time, until golden and cooked through. Drain on paper towels and immediately sprinkle with additional salt. Serve with hot mustard, a Chinese plum sauce or a chilli sauce. Remember to offer toothpicks and paper napkins.
