CREAMY LIVER PATE

1 tbsp flour -- or soy flour
1/4 pt half and half -- 135ml
2 tbsp butter
2 tsp onion -- finely chopped
3 tbsp thick cream
9 slices bacon
1 lemon -- quartered
1 lb lamb liver -- 454gr
2 gherkins -- chopped
1/2 tsp splenda
14 tsp pepper
2 tsp salt
2 eggs
3 sprigs parsley
Mix flour with a little of the milk until it forms a paste, add remaining milk and pour into melted butter.
Heat gently and stir until creamy.
Chop 6 of the bacon rashers and the liver finely and add to the sauce with the onion, cream, gherkins, splenda, salt and pepper and eggs.
Place mixture into a greased dish, top with remaining bacon rashers and stand in a dish of cold water.
Bake in moderate oven 350°F-180°C about 55 minutes, cool and decorate with lemon quarters and parsley.
