COCONUT LAMB KABOBS

500 gr ground lamb -- 1lb
1 tbsp tomato paste
1/4 cup coconut shreds
1 tsp ground cumin
2 tbsp coriander -- chopped
1 tbsp chopped fresh parsley
3 tbsp fresh lemon juice -- or lime
freshly ground pepper
1. Place lamb, tomato paste, coconut, cumin, coriander, parsley, lime or lemon juice and black pepper to taste in a large bowl. Mix well to combine. Roll tbsp of mixture into balls and push three balls onto a lightly oiled bamboo skewer Repeat with remaining mixture.
2. Cook on lightly oiled pre-heated barbecue grill for 4 to 5 minutes each side or until cooked to your liking.
