CAULIFLOWER CATALAN SALAD

Amount Measure Ingredient -- Preparation Method

1 med cauliflower flowerets
1/2 red onion -- finely chopped
2 eggs, hard-boiled -- course sieved
1 tbsp capers -- drained
1 tbsp chopped fresh parsley
CATALAN DRESSING
1/2 cup olive oil
1/3 cup red wine vinegar
2 tbsp lemon juice
2 cl garlic -- crushed
2 tsp splenda
1 tsp paprika -- ground sweet
1 tsp chili -- dried crushed

Boil,steam or microwave cauliflower until tender. About 8-10 minutes. Combine dressing ingredients in a jar; shake well. Combine cauliflower, onion and dressing in a large bowl. Mix gently and refrigerate for 2 or 3 hours or overnight. Remove cauliflower from fridge; Top with egg, capers and parsley.
