BEEF IN BLACK BEAN SAUCE

1 tbsp olive oil
1 cl garlic -- crushed
1 tbsp grated ginger root
1 onion -- finely sliced
350 g beef fillet steak -- cut into strips
2 tsp sesame oil
1/2 red bell peppers -- capsicum de seed and
90 g bean sprouts -- 3oz
60 g snow peas -- 2oz
1 1/2 tbsp black bean sauce
1 tbsp soy sauce
1/4 cup beef stock
1 tsp splenda
1 tsp corn flour -- blend with water
1 tbsp water
1 . Heat vegetable oil in a wok or frying pan. Add garlic and ginger and stir-fry for 1 minute. Add onion and beef and stir-fry for 3 minutes or until beef is browned. Remove meat mixture from pan and set aside.
2. Heat sesame oil in pan, add capsicum, bean sprouts and snow peas and stir-fry for 1 minute. Add black bean sauce, soy sauce, stock, splenda and cornflour mixture. Cook, stirring, until mixture thickens slightly. Return meat mixture to pan. Cook for 2 to 3 minutes longer or until heated through.
