2 tbsp olive oil
2 slices bacon -- fried and crumbed
750 g top sirloin steak -- 1 1/2lb
trimmed and cut in lg cubes
250 g onions -- 8 oz sm about 12
2 cups button mushrooms
1 carrot -- sliced
2 tbsp flour
1 cup red wine
1 cup beef stock
1 tbsp tomato paste
1 cl minced garlic
1/4 tsp thyme
1 bay leaf
chopped parsley
Heat oil and brown bacon and beef, in batches. Lower heat add onions, mushrooms and carrot and cook until golden brown. Stir in flour.
Return bacon and beef to pan with wine, stock, tomatoes paste, garlic, thyme and bay leaf. Cover and
very gently for 1 - 1 1/2 hours, or until beef is tender. Sprinkle with parsley.
