3 slices bacon
4 eggs, hard-boiled -- mashed
1/2 tsp chopped onion
1/4 tsp mustard
1/8 cup mayonnaise
1/2 tsp salt
1/4 tsp pepper
1/3 cup grated parmesan cheese -- very fine
Fry bacon until crisp and chop finely.
Mix with egg, onion, mustard, mayonnaise and seasoning and shape into little balls.
Roll in cheese and refrigerate
