2 lg avocados -- just-ripe
125 g olives -- 4oz stuffed sliced
250 g bean sprouts -- 8oz
2 tbsp spring onions -- finely sliced
your favourite vinaigrette
salt and freshly ground pepper

Peel and slice avocados and place in a salad bowl. Add stuffed olives, bean shoots and sping onions. Toss with your favourite vinaigrette and salt and pepper well. Serve at once with chicken or as a first course.
