4 whole silver bream -- 6-8 oz 350gr
scaled, gutted and cleaned
2 tbsp melted butter
1 lime
8 kaffir lime leaves
1/2 cup fresh coriander -- chopped
2 tbsp soy sauce
2 cl garlic
2 tbsp sesame oil
2 tbsp lime juice

Preheat oven to 350F-180C. Combine Coriander, soy sauce, garlic, sesame oil and lime juice in a small bowl. Rinse fish in cold water. Dry inside and out. Trim off top and bottom fins. Cut three slits in the fattest part of the fish on each side. Cut four pieces of foil. sufficient to completely wrap up each fish. Brush butter on foil. Place a piece of lime into the fish cavity. Brush fish evenly with prepared mixture. Wrap foil around fish. Repeat with each fish. Cook for about 20 minutes. Peel back foil brush with remaining mixture and serve immediately.
