ASIAN STYLE CUCUMBER SALAD

4 cucumbers -- lebanese cut in slic
4 shallots -- white part thin slic
1 tbsp white vinegar
2 tbsp chili sauce -- sweetened
1 tbsp fish sauce
1/2 bunch coriander leaves
50 g peanuts, dry-roasted unsalted -- 2 oz crushed

Wash and dry coriander. Place in fridge until required. Place cucumber and shallots in a bowl and sprinkle with vinegar. Add the chili and fish sauces and toss. Add the coriander and peanuts just before serving. Toss lightly.
