ASIAN SPICY LOBSTER

2 whole cooked lobster meat -- 2 x 1lb 500gr
100 g butter -- 3oz
1/2 lg onion -- peeled and sliced
1 tbsp salt
1 tsp turmeric -- ground
1 tsp saffron -- ground
3 bay leaves
2 clove
1 cinnamon stick
1 tbsp mint leaves -- about 8 leaves
300 milliliters half and half -- 8fl oz
- SPICE MIX-
30 g ginger root -- 1oz crushed
30 g green chili pepper -- 1 oz finely chopped
1 tsp cinnamon -- ground
1/2 tsp bay leaf -- powdered
1/2 tsp clove
2 tsp cumin powder
3 lg tomatoes -- quartered

Cut each lobster into large chunks. Blend together the ingredients for the spice mix. Melt the butter in an ovenproof casserole and saute half the sliced onions over a low heat. Add the spice mix and 2 teaspoons of the salt, stir, then add half the turmeric and saffron. saute over a low heat and add the lobsters just before the mixture starts to go golden. Cover and cook for 10 minutes, stirring occasionally.
Preheat the oven to 170C 325F F, gas mark 3. Boil 100 ml / 3 1/2 fl oz oz water in a small pan with the remaining turmeric and saffron. Add the turmeric and saffron water, the mint leaves and the remaining sliced onion to the lobster. Slowly pour the Half and half round the edges of the dish. Cover and cook in the oven for 1 hour.
