2 Kg ground beef -- 4lb
1 Kg ground pork -- 2lb
500 g bacon -- 1lb finely chopped
1 tbsp coriander -- 3/4oz
1 tsp ground cloves
1 tsp ground nutmeg
30 g salt -- 1oz
5 ml freshly ground black pepper
100 ml vinegar -- 4 fl oz
approx 90g intestinal casing (pork is
better)

Mix all ingredients well.
Add vinegar and bacon to minced meat and mix. Then either
Stuff sausage casing with mixture. (NOT too tightly.)
Or Form patties, balls or sausage no skins
