SIMPLE TOMATO HARISSA SALAD

2 lg tomatoes -- sliced (3 to 4)
1 red onion -- chopped
1 tbsp harissa
1 lemon -- juice of
3 tbsp extra virgin olive oil
salt and pepper
1 sprig coriander -- roughly chopped

In a small bowl mix together the ingredients for the dressing: the Harissa, lemon juice and olive oil (3-4 parts oil to 1 part lemon juice) and a pinch of salt. Whisk together and add freshly ground black pepper. Lay out the sliced tomatoes on a plate and sprinkle with the chopped onion, spoon the dressing over the tomatoes and garnish with the chopped coriander, if required, and serve immediately.
