5 bay leaves
2 tbsp black peppercorns
1 tbsp nutmeg
1 tbsp cloves, ground
1 tbsp ground cinnamon
1 tbsp coriander seed
1/2 tsp mace
1/2 tsp cardamom
1/2 tsp ginger
1/2 tsp turmeric
1/4 tsp anise seed -- ground
1/4 tsp cayenne
1/4 tsp saffron
Grind all the ingredients with a mortar and pestle or spice mill for 1 minute. Store in a tightly closed jar.
