OBOTIE (SOUTH AFICAN GROUND LAMB CURRY)

2 lb ground lamb -- 1k
3 tbsp butter
1 med sliced onions
1 bay leaf
3 tbsp curry powder
4 tbsp splenda
salt and pepper -- to taste
1 tbsp lemon juice
1/2 apple -- grated
1/2 cup sliced almonds
3/4 t nutmeg
3/4 cup whipped cream
2 eggs

This was a very fussy (but worth the effort) dish I used to make pre-low carb days. Came across it last week and decided it would be easy to low carb and it's not near as fussy to make anymore and equally delicious. The original had lots of raisins and more apple and onion and bread soaked in milk. You could probably leave the apple out - I didn't think it made much difference in this version.
Brown lamb and onions in butter.
Add bay leaf, curry, splenda and season to taste. Cook 15 minutes and remove from heat.
Mix lamb mixture, lemon juice, apples and almonds and press into casserole dish.
Mix eggs, cream and nutmeg and pour on top of lamb mixture.
Bake for 1 hour at 375°F-190°C.

Dh proclaimed this every bit as good as the original, ate about 3/4 of it and said we should have this twice a week. I don't know the carb count but it shouldn't be too high (unless yoou eat 3/4 of it)

The original recipe came from The Chez Piggy Cookbook. This is a very good restaurant in Kingston, Ontario.
