1/4 cup minced fresh parsley
1 tsp ground cumin
3 tbsp lemon juice
2 med garlic clove -- minced
1 tsp extra virgin olive oil
2 tsp paprika
1/2 tsp salt
2 tsp fresh mint leaves -- minced
1/4 tsp ground red pepper
Use this rub on chicken, fish or any meat; it makes enough for about one pound. To use, spread over meat and let marinate one hour, then grill and enjoy all the wonderful flavors of North Africa. In small nonreactive bowl, combine parsley, juice, paprika, mint, cumin, garlic, oil, salt and pepper; mix well. Cover and refrigerate until ready to use, up to 1 day. Stir before using.
