Amount Measure Ingredient -- Preparation Method

115 g chiles -- 4oz dried-soak overn
8 garlic clove -- chopped
1 1/2 tsp coriander -- ground
1 tbsp caraway seed
2 tbsp mint -- chopped
2 tbsp coriander leaves -- chopped
1 tbsp parsley -- leaves, chopped
1 1/2 tsp rock salt
1 tbsp tomato puree
1 tbsp splenda
2 tbsp extra virgin olive oil

Simmer the chillies for 2 minutes in a little water and soak for 1 hour and drain.
Blend with all the remaining ingredients in a food processor until smooth. Pass through a sieve to remove any lurking chilli seeds.
Pot in sterilised glass jar, dribble extra olive oil over the surface to create an airtight seal. Refrigerate.
