SPINACH AND CHEESE SQUARES

1/4 cup butter
1 cup soy flour -- 50% flour/isolate
3 eggs
1 cup milk
1 tsp salt
1 tsp baking powder
1 tsp dry mustard
1 1/8 lb frozen chopped spinach -- 1.5kg thawed, squeez
1/2 lb mozzarella cheese -- 250gr shredded
1/2 lb cheddar cheese -- 250gr shredded
Melt butter in a 9 x 13 230x330mm baking dish in the oven. In large mixing bowl, combine flour, eggs, milk, salt, baking powder and mustard. Mix well. Add spinach and cheeses, pour into pan. Bake at 350 F. for 30 minutes.
When set, cut into squares and serve warm. Can be reheated.
