GREEN BEAN CASSEROLE (1 POINT)

1 7/8 lb green beans -- trim cross cut
1 can cream of mushroom soup, condensed
1/2 cup sour cream
1/4 tsp ground black pepper
1 1/2 med onion -- thinly sliced
separated into rings
1/4 cup grated parmesan cheese
2 tbsp pork cracklings -- crushed

In a large bowl, combine the green beans, mushroom soup, sour cream and pepper, and toss gently to mix.

Coat a 2-quart 2 litre casserole dish with nonstick cooking spray. Place the green bean mixture in the dish, and arrange the onion rings over the top. Combine the Parmesan cheese and cracklings in a small bowl, and sprinkle over the onions.

Bake a t350°F-180°C for 50 minutes, or until the green bean mixture is bubbly and the top is lightly browned. Serve hot.

Makes 12 (1/2 cup) servings.
