CHEESY ARTICHOKES

16 oz artichoke hearts -- 500gr
1/2 cup mayonnaise
1/2 cup shredded mozzarella cheese
1 tbsp grated Parmesan cheese -- or Romano cheese
Paprika
Chopped parsley
Thoroughly drain artichokes and pat dry on a paper towel. Cut each into quarters. Arrange artichokes in an 8-inch round baking dish. Combine Mayo, mozzarella and Parmesan or Romano. Spread over artichokes. Sprinkle w/paprika. Bake at 325°F-160°C for 15 to 18 minutes until edges are brown. Sprinkle with chopped parsley.
