BROCCOLI CHEDDAR CASSEROLE FOR A CROWD

8 cups chopped broccoli
1 cup chopped onion -- finely chopped
3/4 cup butter
12 eggs
2 cups cream
1 1/2 tsp salt -- pepper to taste
2 cups grated cheddar cheese -- divided
-Melt butter in a skillet over medium heat.
-Add broccoli &onion; saute till crisp tender;about 5 minutes.Set aside.
-In a bowl, beat the eggs, add the cream &1 3/4 cups of the cheese.Mix well.
-Stir in the broccoli/onion mixture, salt &pepper.
-Pour into a greased 3 quart baking dish; set in a larger pan filled with 1" 25mm of hot water.
-Bake uncovered at 350°F-180°C for 45-50 minutes or until a knife inserted near the center comes out clean.
-Sprinkle on remaining cheese.
-Let stand for 10 minutes before serving.
-Excellent served with a high protein dish, eg.turkey, chicken, roast beef or roast pork.
