ASPARAGUS WITH WALNUT-CHIVE VINAIGRETTE

2 kg asparagus -- 4lb
2 tbsp sherry vinegar
1 1/2 tsp splenda
2 tbsp walnut oil
1/4 cup olive oil
1/4 cup fresh chives -- thinly sliced
sea salt to taste

In a large deep pan of boiling salted water, cook the asparagus for 3 to 5 minutes, or until the stalks are tender but not limp, drain them well and return the bright green stalks to the skillet.
In a bowl whisk together the vinegar, the sugar, the oils, the chives, and salt and pepper to taste. Pour the dressing over the asparagus, shaking the skillet to coat the asparagus with it, and sprinkle the asparagus with the coarse salt. Add lots of black pepper and serve immediately with crusty bread.
