ASPARAGUS IN CREAM

2 lb asparagus -- 1k trim & peel
2 tbsp butter
White pepper -- freshly ground
1/8 tsp ground nutmeg
4 tbsp heavy cream -- heated

Cook the asparagus in boiling salted water for 5 minutes only; it should be only half tender. Drain carefully, reserving the cooking water. Place in casserole.
Add the butter and 2tbsp of reserved water. Simmer covered over very low heat for about 10 minutes, or until asparagus is tender. Shake frequently to prevent sticking, and if necessary, add a little more water, 1 tablespoon a t a time.
Stir a little salt and pepper and the nutmeg into the hot cream. Pour over the asparagus. Cook for 2 to 3 more minutes, or until thoroughly heated through.
Serve very hot.
