ASPARAGUS DIJON VINAIGRETTE

Amount Measure Ingredient -- Preparation Method

1 lb fresh asparagus -- trimmed
1/2 cup oil
1/4 cup red wine vinegar
2 tbsp Dijon mustard -- Maille brand
preferred
1/2 tsp salt -- (1/2 to 1)
1/4 tsp pepper

Cook the asparagus until just tender. If you don't have an appropriate steamer, use a large skillet with one inch of simmering water. Add the asparagus spears and cook about 5 minutes. Drain.
Blend remaining ingredients until smooth. Pour dressing over asparagus and toss gently until evenly coated. Allow to marinate in the refrigerator for several hours.
May be served chilled or at room temperature.
