ASPARAGUS BUNDLES WITH HOLLANDAISE

3 Egg Yolks
2 tbsp Lemon Juice
1/4 tsp Salt
1 dash Cayenne Pepper
1/2 cup Butter -- Melted
2 lb Asparagus -- 1k Trim - 40 Spears
8 Scallions -- Green Part Only
In a pot over low heat mix yolks, 1/4 cup water, lemon juice,salt and cayenne. Cook, whisking constantly, until mixture is light in colour, coats back of a spoon , 7-8 minutes. Slowly whisk in butter until thickened, 1minute. Over high heat bring pot of salted water to a boil. Add asparagus; cook 2-3 minutes. Add scallions during last minute of cooking time. Drain; rinse with cold water. With scallions tie asparagus into bundles of five. Spoon sauce over; serve immediately.
