ARTICHOKES AND GREENS - ANGINARES ME KOUKIA

4 lg artichokes
1 tbsp lemon juice
125 milliliters extra virgin olive oil -- 4 oz
1 kg green beans -- 2lb
across the grain about 45% angle
1 lg leeks
young split lengthways and washed
then cut into 4cm ( 1 1/2 in) pieces
freshly ground black pepper
salt
25 g parsley -- 1oz flat leaf choppe
15 g fresh dill -- 1oz chopped
2 tbsp mint -- finely chopped
1 lemon -- juice and zest
The Mediterranean artichoke is smaller and much more tender than the great, hairy variety which grows in Brittany and Northern California. They can be eaten whole, including the choke, until nearly the end of the season. Most commercial artichokes are of the large globe variety, which need some attention before preparing this dish. If you can find the smaller Mediterranean variety, use them if they are very fresh - but I would always choose freshness over authenticity.
Remove the tough outer leaves from globe artichokes and trim them so they are about 3-4 cm ( 1 - 1 1/2 2 in) long. Remove the choke and trim the stem to about 2.5 cm (1 in), if the vegetable is small and soft, or remove stringy stems entirely. If the artichokes are very large, cut them in halves or quarters. Put them into a bowl of water acidulated with lemon juice, so they don’t discolour while you work.
In a large flameproof casserole heat the olive oil and add the beans, artichokes and leeks, with salt and pepper. Saute for about minutes, add 250 ml (8 ft oz) water, cover and simmer for 20 minutes. Add the herbs, lemon zest and juice and continue simmering for another 5-10 minutes, until all the vegetables are tender
