ARTICHOKE BALLS

1 garlic clove -- minced
1 tbsp olive oil
1 can artichoke hearts -- (8 oz) mashed
1 egg -- beaten
1/4 cup Parmesan cheese
Pork Rinds 1/2 cup -- crushed
Sauté garlic in oil. Add egg and artichokes. Cook over low heat for 5 minutes. Remove from heat. Add Parmesan cheese and 1/4 cup crushed pork rinds. With a teaspoon, form into balls. Roll in remaining pork rinds. Chill 2 hours or until ready to serve.
