TONY'S CREAM OF CHICKEN SOUP

Amount Measure Ingredient -- Preparation Method

1 sm chicken
2 pt water -- 1 litre
salt and pepper
1 tsp tarragon
1/2 oz butter -- 15g
1/2 oz soy protein isolate -- or whey 15g
1/4 pt half and half -- 50% cream/water
3 tbsp cream

Put all the chicken into a saucepan with the water and add a little salt and pepper.
Simmer gently for 1 1-1/2 hour then strain the stock.
Remove the flesh from the chicken and mince or chop finely
Make the sauce with the butter, isolate and half and half
Add to the chicken stock and cooked chicken.
Re-heat, season more if required and stir in the cream.
Garnish and serve with selection of Garnishes

Italian flat leaf parsley
a few tips of asparagus
sprinkle paprika pepper
