SPINACH AND CLAM SOUP

2 slices bacon -- cut into 1" -25mm
2 anchovy fillets -- oil-packed, chopped
1/2 sm onion -- chopped
1 sm garlic -- minced
2 cups chicken stock
1 pkg frozen spinach -- (6 oz)
thawed and squeezed dry
3/4 cup clams -- fresh or canned chop
3/4 cup heavy cream
salt and pepper to taste

All the ingredients for this Fish flavoured soup are available year round. It makes an appetizing starter for broil/grilled/grilled Marinated Lamb Chops
Place the bacon, anchovy fillets, onion, and garlic in a large saucepan. Cook over medium heat, stirring, for 3 minutes, or until the bacon begins to brown. Add the stock and bring to a boil. Stir in the spinach, clams, and cream, and return to a boil. Add the salt and pepper, lower the heat, and simmer for 4 minutes. Serve immediately. Makes about 3 cups.
