SPICY LEMON SEAFOOD SOUP

1/2 kg shrimp -- medium. 1lb
250 g fish fillets -- white 8oz
200 g calamari -- hoods
2 tsp olive oil
1 lg red onion -- halved, sliced
2 cl garlic -- crushed
1 tbsp lemon zest
3 bay leaves
1 tsp paprika
1 lg red chili peppers -- sliced
1/2 cup dry white wine
3 tbsp lemon juice
1 1/2 qts fish stock
2 tbsp parsley -- chopped
5 lg scallions -- chopped

Peel and devein prawns leaving tails
intact. Cut fish and calamari into 2cm
Peel and devein prawns leaving tails intact. Cut fish and calmari into chunky pieces. Heat oil in large pan add red onion and garlic, cook, stirring, until onion is
soft. Add rind, bay leaves, paprika, chillies, wine, juice and stock; simmer, uncovered, 20 minutes. Add seafood, parsley and green onions, simmer, uncovered, 2 minutes or until seafood is just cooked; discard bay leaves. Serve hot.
