SHRIMP BISQUE

2 tbsp butter
1 sm onion -- minced
1 tsp minced garlic
2 cups cooked shrimp -- prawns chopped
4 cups half and half -- 50% cream-water
salt and white pepper -- to taste
paprika

Melt butter ina soup pot. Cook the onion for 5 min, adding the garlic for the last 2 min, over low heat until tender. Do not brown the onion. Add the shrimp and heat. Pre-heat the half and half, a little at a time, in the microwave. (This helps to prevent scorching.) Add half and half slowly to the soup pot. Add salt and pepper. Heat on very low heat for 15 min. Sprinkle with paprika before serving.
