PRAWN BISQUE

500 g cooked shrimp -- prawns 1lb
1 tin clam broth
1 1/4 cups cream -- thick
1/4 tsp paprika
salt and pepper
6 tbsp sherry
1 tbsp chopped parsley
1 tbsp chopped chives
1 tbsp sour cream
1. Blend the prawns and chowder in an electric blender and blend for 1 minute. If you do not have a blender push through a sieve
2. Add cream, sherry, parsley and bring to boil.
3. Serve immediately garnishing with a dob of sour cream and a sprinkling of chives.
Serves 6.
