3/4 lb beef -- 385 gr
' any cheap cut '
1 qt beef stock
1 dash salt and pepper
1 whole onion
1 whole baby carrots
1 tbsp parsley
1 tbsp celery
1 whole bay leaf
Cut the meat into small pieces. Place in saucepan with other ingredients, simmer very gently for 1 hour. Strain through several layers of muslin. Add a dash or two of sherry if desired. To clear the consomme put in a stiffly beaten egg white and clean egg shell. Gently simmer again for 20 minutes then re strain.
Store consomme in fridge.
Consomme Julienne : Place enough consomme for four servings into saucepan. Cut selected vegetables ( enough for four ) into thin slices. Cook and arrange in 4 bowls. Pour consomme gently over vegetables.
