1 lb fish fillets -- 454gr
2 cups cauliflower
1 lg onion -- thinly sliced
Salt and pepper
3 cups cream
2 tbsp butter
1 1/2 cups water
Melt butter in soup kettle, add onions, and cook but do not brown. Then add cauliflower and the water. Boil until cauliflower is almost cooked.
Add the fish, which will take 6 to 10 minutes to cook. Add cream, salt and pepper. Before serving, cut 3/4 pound of salt pork into 1/4-inch 6mm squares and cook slowly in a frying pan until brown and crisp. These brown best if you keep pouring off the fat. Sprinkle salt pork cubes on top of the soup.
This makes about 8 servings which would equal 4 carbs each serving. You could lower this by using fewer onions.
