MALAYSIAN PRAWN AND SPINACH SOUP

16 whole green prawns
1 tbsp peanut oil
2 cups water
1/4 tsp salt
1 sm spinach
1/2 onion -- finely sliced
1 red chili peppers -- seeded and sliced
1 cl garlic -- crushed
1/2 tsp ground turmeric
1 cup coconut milk
This creamy Soup is a perfect first course for a special dinner with a South- east Asian flavour. The turmeflc adds a lovely golden colour
Shell and dc-vein the prawns. In a saucepan heat half of the oil and when very hot throw in the prawn heads and shells. Stir, and after 2 mins, add 2 cups water and a pinch of salt. Bring to the boil and simmer for 20 mins. This step may be done in advance if you wish.
Wash spinach thoroughly and chop coarsely. In a saucepan, heat remaining oil and stir in onion and chillies and cook on medium heat for about 3 to 4 mins. Add the garlic and turmeric and cook for 1 min.
Add spinach leaves, coconut milk and enough strained prawn stock to cover spinach. Bring to the boil, lower heat and cook until spinach is tender.
Stir in the prawns, which have been cut into bite-sized pieces. Cook the soup for an extra 2 or 3 mins. without boiling. Serve immediately.
